Corn Fritters with Spicy Mayonnaise


Why was I the last to know about Corn Fritters? The entire time I was eating these I just kept saying, "corn fritters are so good!" I'll say it again, corn fritters are so good! I can't believe I've never tried these before. What, have I had my head stuck in the sand? These are so good! Okay, so they're not great for you but heck, neither is fried chicken but you won't see me turning that down anytime soon. You can't eat healthy all the time, right?

I figured since we were eating deep fried goodness that we might as well go the distance. Therefore, I served these fritters with a side of spicy mayonnaise, it was a perfect accompaniment. Obviously I won't be eating these corn fritters every day but I can tell you I won't stop thinking about them anytime soon. Did I mention these are so good?!

RECIPE adapted from Allrecipes:
3 cups oil for frying (I used peanut oil)
1 cup sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 tsp black pepper
pinch cayenne pepper
pinch garlic powder
pinch onion powder
1/4 teaspoon white sugar
1 egg, lightly beaten
1/2 cup milk
1 tablespoon shortening, melted
1 (12 ounce) can whole kernel corn, drained

Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
In a medium bowl, combine flour, baking powder, salt and sugar. Beat together egg, milk, and melted shortening; stir into flour mixture. Mix in the corn kernels. Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels.

Spicy Mayonnaise:
1/2 cup mayonnaise
1-2 tsp sambal chili sauce (or to taste)
1 tsp freshly squeezed lemon juice

Never had corn fritters either, but I do love fritters in general. But I'm usually to lazy to make any ;) This is the second time I see delicious fritters in blog land, maybe I should go bake some :)

I've always been a little scared to deep fry myself but my mom made these growing up and they are so tasty. Your recipe inspires me to try it on my own!

Go for it Sharon! I understand your apprehension though. A few tips; only fill the pan 1/3 full of oil, use a thermometer to regulate the heat, have the pan's lid close by to cover if you run into trouble and don't leave the room! Any one else have tips?

When I was a little girl, we went to a restaurant named Peter Pan Inn. They served "exotic drinks" in hurrican glasses you got to take home and meals were served family style with all you could eat. Corn fritters were dusted with confectioners sugar were were the most delicious thing to eat.

Mayo is the inevitable choice with something deep-fried. I usually go with tartar sauce.

yeah for corn fritters!! we just absolutely adore these and eat these all the time, especially when good corn is in season! But I will have to try the tasty spicy mayo!
